This refreshing and healthy Watermelon Salad will be your go to salad this summer. Trust me when I say it is incredibly easy and so flavorful. Make it for your next cookout or with a weeknight meal. It's delicious.
For this recipe make sure to use a high quality balsamic. You almost want it to have a thick syrupy consistency. I use Due Vittorie balsamic from Modena. You can get it on Amazon. It is my favorite. Also, high quality olive oil is key. I use olive oil from my Tuscan home. It is available right here on my website.
Watermelon Salad
(Serves 6)
1.5 lbs. Watermelon (I used seedless), cut into ¼ inch cubes
1.5 oz. Red Onion(about a ¼ cup), diced
1/2 Cup Pitted Kalamata Olives, drained and halved
1//4 Cup Pepperoncini, drained, seeds removed and chopped
¾ Cup Baby Arugula
1 tbsp. Fresh Mint, chopped
1 tbsp. Fresh Basil, chopped
¾ Cups Pistachio, chopped
1.5 tbsp. Balsamic, high quality
¼ Cup Olive Oil
½ tsp. Salt
¼ tsp. Pepper
4 oz. Feta, cut in small cubes
Method
In a large bowl combine the watermelon, red onion. olives, pepperoncini, arugula, mint, basil, and pistachios.
In a small bowl mix the dressing. Combine the balsamic, olive oil, salt and pepper.
Pour the dressing over the watermelon salad.
Mix in the feta and serve.
RECIPE NOTES….
Soak your sliced red onions in ice water for 15 minutes before using, then rinse and dry. This will reduce the risk of indigestion and make the onions less pungent.
To make the salad ahead of time. Chop all the ingredients and keep them separate. Assemble when ready to serve.
If you cut up the watermelon ahead of time that is fine. Just be sure to drain out the excess water before mixing the salad.
