Salmon with Arugula & Farro Salad

I love a good salad and this lately is one of my favorites.  The addition of the farro to the salad, not only makes it super healthy but it fills me up as well.  I love to have it with some of my air fried salmon (see my recipe for that one) for lunch or I even make it for dinner.  My kids love it since they are constantly trying to stay healthy and fit during their sports seasons.  A quick note about this.  The vinaigrette is super simple, but delicious.  So, it is very important to use high quality extra virgin olive oil and balsamic.  The one I used for this recipe is from @martoni market in Northport.  The quality of the olive oil is amazing and the balsamic, aged for 5 year and it is the best I ever had! So make sure to use the highest quality of ingredients.  It will make your food taste that much better, especially when you are trying to eat healthy.

4 (6oz) Salmon Filets Air Fried – See the Recipe on my website

½ Cup- Farro (pearled)

1 ½ Cups of Baby Arugula

¼ Small Radicchio- Sliced Thinly

¼ Cup Grape Tomatoes – Halved

2 Mini Cucumbers – Diced

¼ Small Red Onion – Sliced thin

⅓ Cup Extra Virgin Olive Oil

2 Tbsp. Balsamic

½ Tsp. Salt

¼ tsp. Black Pepper

Boil ½ cup of uncooked farro according to package directions, drain and cool.  In a small whisk together the olive oil, balsamic, salt and pepper.  In a separate salad bowl, combine the arugula, radicchio, tomatoes, cucumber and red onion. Add in the cooled farro and drizzle the mix the salad with the vinaigrette. Serve
