Italian Tuna

(Serves 3)

Italian tuna salad with no mayo. The salad is so light and delicious. Often my grandparents would make this for lunch but it is great for dinner too.  Maybe with a bowl of soup. Be creative with this salad.  You can mix up the ingredients. If you don’t have any roasted peppers on hand no problem, add in some chopped cucumbers. 

Ingredients

8.4 oz Tuna Filets (use high quality), Drain 

2 Tbsp. Non-pareil capers, Drained 

3 Tbsp. Chopped roasted peppers, Chopped

2 celery stalks (2 oz.), Chopped 

2 Tbsp. red onion (about ½ oz), chopped 

10 Kalamata Olives, Cut in quarters 

½  tsp. Salt 

½ tsp. Black Pepper

1 tsp. Oregano 

¼ cup Extra Virgin Olive Oil 

3 lemons juiced (About a ½ cup)

Romaine Lettuce and Toasted Bread Of Your Choice- Optional

Method

Put the tuna in a bowl and mash into tiny pieces with a fork. Next add the capers, roasted peppers, celery, red onion, and olives. Season with salt, pepper and oregano. Add in the olive oil and lemon juice and pour over the tuna salad. Combine well. Chill and serve. I like to toast crusty bread, top with romaine lettuce and tuna salad.  You can store this in an airtight container for 2 to 3 days!
