Italian Tuna
(Serves 3)
Italian tuna salad with no mayo. The salad is so light and delicious. Often my grandparents would make this for lunch but it is great for dinner too. Maybe with a bowl of soup. Be creative with this salad. You can mix up the ingredients. If you don’t have any roasted peppers on hand no problem, add in some chopped cucumbers.
Ingredients
8.4 oz Tuna Filets (use high quality), Drain
2 Tbsp. Non-pareil capers, Drained
3 Tbsp. Chopped roasted peppers, Chopped
2 celery stalks (2 oz.), Chopped
2 Tbsp. red onion (about ½ oz), chopped
10 Kalamata Olives, Cut in quarters
½ tsp. Salt
½ tsp. Black Pepper
1 tsp. Oregano
¼ cup Extra Virgin Olive Oil
3 lemons juiced (About a ½ cup)
1/2 cup Chickpeas, drained (optional)
Romaine Lettuce and Toasted Bread Of Your Choice- Optional
Method
Put the tuna in a bowl and mash into tiny pieces with a fork. Next add the capers, roasted peppers, celery, red onion, and olives. Season with salt, pepper and oregano. Add in the chick peas, olive oil and lemon juice. At this point if you are making for meal prep, store in the refrigerator in an airtight container. When serving I like to add in the romaine. To serve you can eat the salad all by itself, or I like to toast crusty bread.
