Italian Chicken Salad
This Italian Chicken salad has no mayo and is so light and delicious. This salad is based on my Italian tuna salad recipe. Be creative with it. You can mix up the ingredients and use what you like.
Ingredients
Serves 32
2 cups Shredded Pulled Rotisserie Chicken
2 Baby Cucumbers, chopped
3 Tablespoons Roasted Peppers, Chopped
2 Celery Stalks (2 Ounces), Chopped
2 Tablespoons Red Onion (about ½ Ounce), Chopped
10 Castelvetrano Olives, Cut in Quarters
½ Teaspoon Salt
½ Teaspoon Black Pepper
1 Teaspoon Oregano
1/3 Cup Olive Oil
3 Lemons, juiced (about ½ Cup)
Romaine Lettuce and Toasted Bread Of Your Choice (Optional)
Method
Put the chicken in a bowl and add the cucumbers, roasted peppers, celery, red onion and olives.
Season with salt, pepper and oregano.
Add in the olive oil and lemon juice and combine well.
Chill and serve.
**Recipe Note: I like to toast crusty bread or a large cracker and top it with romaine lettuce and salad. You can store this salad in an airtight container for 2 to 3 days
