Fennel Salad with Orange and Smoked Salmon

Fennel Salad with Orange and Smoked Salmon is such a delicious and healthy recipe that is so simple to put together.  I make a simple vinaigrette with fresh orange juice and olive oil.  Be sure to use high quality extra virgin. I even add olives and capers to the salad.  The flavors are incredible.  It has become my new go to lunch and I love it.

Fennel Salad with Orange and Smoked Salmon

(Serves 2)

2 Oranges Juiced – about 6 Tbsp

¼ Cup Extra Virgin Olive Oil – Use High Quality

¾ tsp. Salt

½ tsp. Black Pepper

1 Fennel Bulb- halved and sliced very thin

2 Oranges- Peeled and then cut into sections 

2 tbsp. Capers- drained

⅔ Cup Kalamata Olives  – Sliced in half

4 oz. Sliced Smoked Salmon

In a bowl, make the dressing by whisking together the orange juice, olive oil, salt and pepper.  Then in a bowl put the fennel, orange sections, capers and olives.  Pour ¾ of the dressing over the mixture and toss.  Place the fennel salad on a platter.  Arrange the smoked salmon slices over the top of the salad and drizzle on the rest of the dressing. Serve
