Chipotle Tuna

This is my new favorite lunch. My chipotle tuna salad is not only delicious but it’s high in protein.

For this salad, I use Rio Mare Tuna. It is high-quality and it’s Italy’s number one brand in tuna. Its flavor and texture is incredible and it’s packed in olive oil.

Chipotle Tuna Salad

Ingredients

(Serves 4)

3- 4.2 oz Cans of Rio Mare Tuna in Olive Oil (About 2 cups), mashed

½ cup Corn Kernels

2 tbsp. Red Onion..see note below

1/2 cup Celery, diced

1/2 cup Black Beans, rinsed 

Dressing

1/2 cup Mayo

1/4 cup Greek Yogurt

1/4 cup Cilantro

1 Adobo Pepper

2 tbsp. Adobo Juice

1 Lime, Juiced

½  tsp. Salt

⅛  tsp. Pepper

⅛  tsp. Garlic Powder

⅛ tsp. Smoked Paprika

Sandwich Bread and Toppings of Choice

Method

First make the dressing, in a food processor add in the mayo, yogurt, cilantro, chipotle peppers and juice, lime juice, salt, pepper, garlic powder and smoked paprika. Pulse well.

In a large bowl add the tuna, corn, red onion, celery and black beans.  Add in the dressing and mix well.  

Serve on toasted sour dough with the toppings of your choice.


NOTES:

Soak your sliced red onions in ice water for 15 minutes before using, then rinse and dry. This will reduce the risk of indigestion and make the onions less pungent.
