Arugula Salad with Fennel and Dijon Vinaigrette
Ingredients:
1 medium fennel bulb-sliced thin
5 radishes-sliced thin
½ English cucumber sliced and quartered
1 package of Arugula
Fresh Parmesan cheese-use a potato peeler to grate the cheese on top
Dressing:
¼ cup of balsamic vinegar
1 tsp of Dijon mustard
½ shallot minced
¼ tsp salt
Dash of pepper
⅓ cup of Olive Oil
Assemble salad. Combine dressing ingredients and shake very well. Add dressing to the salad and mix well.
