Arugula and Farro Salad

I love a good salad, but sometimes they don't fill me up. THIS Arugula Salad with Farro is so incredibly healthy and filling you will love it.  I eat the whole thing by myself.

Arugula is low in calories and high in vitamins and minerals. Farro is an ancient grain that is a great source of fiber, iron, protein and magnesium. And it is also rich in antioxidants. And PArmigiano Reggiano is not only delicious, it is high in protein 

Arugula with Farro Salad

Ingredients 

(Serves 2)

2 cups Baby Arugula

1 Cup Cook Farro 

1 Small Fennel Bulb, sliced thinly 

3 tbsp. Pistachios, chopped

Shaved Parmigiano Reggiano to Taste

Dressing

¾ tsp. Dijon Mustard

¾ tsp. Honey

2 tbsp. Balsamic (high quality)

½ cup Olive Oil

Salt & Pepper to taste


Method 

In a salad bowl, combine the arugula, farro, fennel and pistachios.

In a small bowl make the dressing by combining the dijon, honey, balsamic and olive oil.  Whisk well.

Pour the dressing over the salad and mix. Serve top with shavings of Parmigiano Reggiano
