Crispy Roasted Potatoes


If you follow my easy method with these 4 quality ingredients, you can make the CRISPIEST (most delicous) ROASTED POTATOES, and they couldn’t be easier to do.

In this recipe I can’t stress how important quality ingredients are, even the potato! I use yellow potatoes from Costco.  To me they are the best and they are cheap.the brand is Earth Fresh. 

Also, I use my extra virgin olive oil from my home. 

The main spice in this recipe is Teresa’s Tuscan Spice.  It is incredible and is available on my website along with the amazing olive oil.  I use the spice in salads, in marinades, on veggies, fish and so much more.  If you didn’t purchase it yet, you can use a store bought Italian Spice, but trust me this one is the BEST!!


Ingredients 

(Serves 4)

3 lbs. Potatoes, peeled and cut into wedges

½ Cup Olive Oil

2 ¼ tsp. Italian Spice, I use Teresa’s Tuscan Spice

1 tsp. Salt


Method

Soak your potatoes in cold water for at least 20 minutes. 

Boil a large pot of water and add in salt.

Boil the potatoes for 8 minutes.

Preheat the oven to 400 degrees.

In the meantimes combine the olive oil, Italian spice and salt.

Drain the potatoes and put them back in the pot.  Gently shake them around a little.  You will notice the sides of the potato wedges get a little roughed up.  That is ok because this will help make the potatoes extra crispy, almost like a coating.  Add in the olive oil mixture and gently turn.

Get the potatoes in an oven safe pan (lightly coated in olive oil) in a single layer and bake for 25 to 30 minutes until golden brown.  I would also gently turn the potatoes half way thru,  to ensure that they are not sticking to the pan and that they get crispy on both sides.
