Smashed Potatoes

Smashed potatoes are one of my favorite side dishes. I could eat them like a potato chip. They are so addicting.  I served them with roasted chicken and broccoli rabe.  What an incredible meal that was.

(Serves 7)

2 lb. Mini Potatoes

1 tbsp. Plus 1 tsp. Salt

1 tsp. Garlic Powder

½ tsp. Black Pepper

1 tsp. Dried Oregano

½ Cup Extra Virgin Olive Oil

Preheat the oven to 425 degrees.  Line a baking sheet with parchment paper.  Add the potatoes to a pot and bring to a boil.  Add a tablespoon of salt. Cook for 15 minutes or until you can easily put a knife through a potato and drain well. In a bowl combine 1 tsp. salt, garlic powder, pepper, oregano and olive oil and mix well.  Pour over the potatoes and mix, coating the potatoes in the mixture. Place the potatoes on the parchment and smash using the bottom of a rounded glass.  Note if the potato is sticking to the glass, brush some olive oil on the glass bottom.  Once the potatoes are all smashed, brush with the olive oil mixture and put in the oven.  Bake for 20 minutes, flip each potato and brush with olive oil again.  Bake for about 10 minutes until the potatoes are nice and crispy. Serve.
