Chicken Spiedini

Chicken Spiedini are a delicious meal that my whole family loves.  I often serve them with rice and salad, and it makes for an easy and healthy weeknight meal.  

For those of you that don't know, spiedini literal translation from Italian to English is “Skewers.” They are like fancy Italian meat kebabs that can be made to your liking and they are usually breaded.

My grandpa would always make beef spiedini, which I love, but the chicken are my favorite.

Chicken Spiedini

(Makes about 9 Skewers)

Marinade

½ Cup Extra Virgin Olive Oil, plus extra for brushing the chicken 

9 Garlic Cloves

4 Lemons Juiced

2 tsp. Salt

1 tsp. Pepper

½ Cup Chicken Broth

Spiedini

3 lbs Chicken Breasts – Cleaned and trimmed- Cut into cubes

3 Eggs- Beaten

2 Cups Italian Style Bread Crumbs -See MY recipe

12 inch Wooden Skewers

In a small frying pan heat the olive oil and garlic.  Cook until the garlic is fork tender and then mash it right into the oil and cool. In a small bowl combine the garlic and oil, lemon juice, salt, pepper and chicken broth. 

Place your chicken in a bowl and pour 3/4 of the marinade over the chicken and let it marinate for 20 minutes. Reserve the rest of the marinade for later.

Soak your wooden skewers in water for 20 minutes and dry them off. Line a baking sheet with parchment paper and brush it with olive oil. Preheat your oven to 400 degrees.

Put the eggs in a bowl and beat them.  In a separate bowl put the bread crumbs.  

Take the chicken pieces and shake off any excess marinade and put in the eggs.  Then coat each piece with the bread crumbs. Place 5 pieces of chicken on each skewer and place on the parchment paper.  Brush each skewer with olive oil (on all sides) using a pastry brush.  Get in the oven and bake for 20 minutes. Brush each side of the skewers with the remaining marinade and bake for about 15 more minutes until the chicken is cooked thru and crispy. Serve.
