Italian Sauteed Onions

My Uncle Giovanni’s Italian sauteed onions are so delicious for your summer BBQ.  They are great on burgers, but they take ordinary hot dogs to another level.  

Ingredients

(Serves 6)

3 Onions (1.5 lbs), sliced thin

5 tbsp. Olive Oil 

4 Garlic Cloves 

4 tbsp. Tomato Paste

3 tbsp. Sugar

⅔ cup Water

1 tsp. Salt

½ tsp. Pepper

⅛ tsp. Red Pepper Flakes (Optional)


Method

In a frying pan, heat 2 tbsp. of olive oil on a low flame. Add in the onions and cook for about five minutes.  Turn and cover and cook slowly until the onions are cooked thru and caramelized. This will take about 20 minutes.  

In a separate frying pan saute garlic in 3 tbsp. of olive oil until the garlic is tender.  Do this on a low flame.

Add the onions to the cooked garlic and get in the tomato paste. 

Mix in the paste, sauteeing for about a minute then add the water, sugar, salt and pepper. 


Combine well and cook for about 10 minutes. 

Remove the garlic. Serve on burgers or hot dogs.
