"Marry Me" Chicken Tortellini Soup

“Marry Me” Chicken Tortellini Soup

(Serves  4 to 6)

Ingredients

1 tsp. Butter

1 tbsp. Olive Oil

1 Small Onion, chopped

⅛ Tsp. Red Pepper Flakes (Optional)

½ cup Sundried Tomatoes, drained and chopped 

2 tsp. Salt

½ tsp. Pepper

1 tsp. Italian Spice, I use Teresa’s Tuscan Spice

1 lb. Rotisserie Chicken, pulled and shredded

1 28 oz. Can Fire Roasted Diced Tomatoes, crush the diced tomatoes a little with your fingers

6 Cups Low Sodium Chicken Broth

1 Lb. Cheese Filled Tortellini

2 Cups Spinach, chopped

½ Cup Heavy Cream

½ Cup Grated Pecorino Romano


Method

In a large pot, heat up the butter and add in the onions and red pepper flakes.  Cook until the onions are translucent.  

Next, add in the sun dried tomatoes, Italian spice, salt and peppers. Saute for 2 minutes. 

Add in the rotisserie chicken and saute for 2 minutes.  

Next get in the fire roasted tomatoes bring to a light simmer and add in the chicken broth.

Cook on low for 15 minutes and add in the spinach. 

Cook until the spinach begins to wilt, about 2 minutes.

Add in the tortellini and cook about 5 minutes.

Next add in the grated Pecorino and heavy cream.  Combine well and serve immediately. 

Recipe note: You can make the soup ahead of time up to the step where you add in the tortellini.  When you are ready to eat it you can proceed with the rest of the instructions.
