Candied Sweet Potatoes
8 Large Sweet Potatoes -peeled then halved then each half quartered
1 1/2 Cups (12 oz) Maple Syrup – I use Log Cabin
1 Cup Light Brown Sugar
1 Stick Butter
2 tsp. Cinnamon
Preheat the oven to 375°. Put the sweet potatoes in a large 15 x 10 glass bottom Pyrex dish. Pour the syrup over the potatoes along with the brown sugar, and the cinnamon. Cut up the butter into small pats and place over the top of the sweet potatoes. Combine well and cover with aluminum foil. Put in the oven for about 1 hour and then uncover and put back for 10 minutes or until the sweet potatoes are cooked through.
