Potato Side Dish
Ingredients
(serves 4)
2 lbs Potatoes, peeled and quartered
8 oz. Cherry Tomatoes
1 cup Kalamata Olives, halved
½ cup Olive Oil
1 ¼ tsp. Salt
½ tsp. Pepper
Method
Preheat the oven to 375°.
Place the potatoes, cherry tomatoes and olives in a baking dish. I use a Pyrex.
Add in the olive oil, salt and pepper. Combine well and bake for about 35 minutes until the potatoes are cooked through and slight browned.
