Chicken Salad

EASY CHICKEN SALAD. It’s back to school time and this easy chicken salad using a store-bought rotisserie chicken is a really delicious lunch to make for your kids. You can make this ahead of time and store it in an airtight container and make the sandwiches as needed. 

Chicken Salad

(Makes 3 Sandwiches)

1 Rotisserie Chicken

2 Celery Stalks – Chopped

⅓ Mayo

2 tbsp. Fresh Dill – Chopped

3 tbsp. fresh Lemon Juice

½ tsp. Salt 

½ tsp. Pepper

3 Rolls

Lettuce and tomato for the sandwich -optional

Pull all of the meat off of the rotisserie chicken and put it in a bowl. Make sure you use your hands to shred it up. Add the celery, mayo, dill, lemon juice and salt and pepper. Mix well. Cut open your rolls. Scoop out any excess dough. Put the chicken salad on the roll and garnish with lettuce and tomato and serve.
