Pasta with Zucchini in a Light Tomato Sauce

Pasta with zucchini in a light tomato sauce is a perfect dish for summer. A lot of us have zucchini in our garden and this is a great way to use it. It’s a fast meal that’s so easy and delicious your entire family will love it. 

Pasta with Zucchini in a Light Tomato Sauce

(serves 6)

½ Cup Olive Oil

6 Garlic Cloves – Whole

6 Zucchini – Diced

⅛ tsp. Red Pepper Flakes

1 28 oz Can of Mutti Polpa – If you don’t have this use whole tomato and puree

1 tsp. Salt

1 ½ lbs. Pasta- I used spaghetti but use what you like

10 Basil Leaves – Chopped

And a large fry pan heat up olive oil on a low flame and add the garlic. Sauté the garlic until four tender. When it’s fork tender, mash it up with a fork into the olive oil. Add in your zucchini and sauté until soft. Next add in your salt and your red pepper flakes. Sauté for a few more minutes and then add in your tomatoes and basil. Simmer on low for about 10 to 15 minutes and cook your pasta. Reserve some pasta water and add it to the sauce. Probably about a half a cup just to loosen the sauce up a little bit. Drain your pasta and add it to the sauce. Mix well and serve topped with grated pecorino Romano.
