Herb Roasted Olives
Ingredients:
4 TBSP olive oil
7 sprigs of fresh Thyme
3 sprigs of fresh Rosemary
3 sprigs of fresh Oregano
1 tsp fennel seeds
¼ tsp red pepper flakes
2 cups of Italian Olives
5 lemon rounds
2 garlic cloves plus 5 whole cloves for garnish
Zest of 1 lemon
1 TBSP red wine vinegar
Instructions:
Crush or muddle the thyme rosemary, fennel seeds, red pepper flakes, garlic, oregano, lemon zest, and olive oil. Put Olives on a small baking sheet and add the mixture to the olives. Stir in the lemon rounds. Mix well. Add the red wine vinegar and the remaining 5 garlic cloves and mix well. Bake at 400 degrees for 25 min. Remove from the oven and garnish with fresh herbs. Serve with a nice crusty Italian bread.
