Filetto di Pomodoro

(Serves 7) 

½ Cup Extra Virgin Olive Oil

2 Small Onions – Chopped

½ Lb. Prosciutto – Sliced Thin Then Chopped up Fine

3 Whole Tomatoes in the Can

12 Basil Leaves -Chopped

Salt and Pepper to Taste

2 Lbs. Pasta

Boil the pasta water and add salt. In a frying pan put the olive oil and heat up on a low flame.  Add the onions and sautee for about 10 minutes until the onions become translucent.  Puree two tomato cans, and then mash the other can with your hands.  

Now add the prosciutto to the onions.  Sautee for another 5 minutes then add the basil.  Sautee for 2 minutes, then add the tomatoes. Salt and pepper to taste. Cook for about 15 minutes and then begin to cook your pasta.  Drain and add the sauce to it and serve.
