Baked Feta with Orzo and Shrimp

Creamy Baked Feta With Orzo and Grilled Shrimp is an easy and delicious meal that you can make any night of the week. 

Baked Feta Orzo with Grilled Shrimp

(serves 7)

3 Pints Cherry Tomatoes

16 oz. Block of Feta 

¾ Cups Extra Virgin Olive Oil, plus 2 Tbsp

1 Tsp. Salt, plus ¼ tsp.

1 Tsp. Pepper, plus ¼ tsp.

⅛ Tsp. Red Pepper Flakes

5 Garlic Cloves – Sliced Thin

6 Basil Leaves – Chopped

35 Shrimp – Cleaned and Deveined

1 Lemon – Juiced

1 lb. Orzo

Preheat your oven to 400°. Boil water for the orzo.  

In an oven safe baking dish put 3 pints of cherry tomatoes. Add 3/4 of a cup of olive oil, the garlic, a teaspoon of salt and a teaspoon of pepper to the tomatoes. Mix this well. Nestle the feta into the middle of the tomatoes in the pan. Top with the red pepper flakes and a small drizzle of olive oil.

Put this in the oven and bake for 40 minutes. In the meantime prepare your shrimp. In a bowl combine 2 tablespoons of olive oil, ¼  teaspoon of salt, ¼  teaspoon of pepper and the juice of 1 lemon. Mix in the shrimp.  Let them marinate for 5 minutes and grill. Cook the orzo and drain. 

When the feta is done,  take it out of the oven and, using a spatula mix the creamy baked feta with the tomatoes. Add the orzo and then the shrimp. Mix in the basil and serve.
