Sausage with Potatoes in a Beer Marinade is a delicious and flavorful meal. It is so easy to do and your family will love it. Usually I do this dish without the beer but I decided to change it up a bit and I love the way it came out. Serve with a fresh salad and you have an incredibly scrumptious meal.
Sausage with Potatoes and Beer
(Serves 4)
8 Sausage Links
4 Rosemary Sprigs, plus 2 tbsp. Chopped Rosemary
2 Cups Beer
2 lbs. Potatoes, peeled
1 Onion (6oz), sliced
4 Garlic Cloves
3 tbsp. Olive Oil, plus more for greasing the pan
1 ¼ tsp Salt
½ tsp Pepper
Method
Using a knife prick small holes in the sausage. Put in a bowl with the rosemary and add in the beer. Marinate for 2 hours.
Preheat the oven to 400 degrees. Coat a Pyrex dish with a little olive oil. Add in the potatoes, and onions.
Season with salt, pepper, rosemary, garlic and drizzle in the olive oil. Mix week.
Remove the sausage from the beer and place on top of the potatoes
Pour in some of the beer marinade. Cover with aluminum foil and bake. After about 30 minutes remove the foil turn and put back in the oven.
Cook for 15 minutes, turn the sausage and bake for 15 more minutes. Serve
