Samoa Cookies


I love Samoa girl scout cookies. But when you take a look at the ingredients you will see that they are very unhealthy. Being that I could eat a box of them all by myself, I wanted to create a healthier version.

Trust me when I say these 6 ingredient Samoas taste just like the original and are so much better for you.

Homemade Samoas

(Makes about 18 to  20 Cookies)

Ingredients

20 Medjool Dates, pit and soak in warm water, drain and dry

1 Cup Flaked Coconut, toasted until slightly golden at 325 degrees

**You can also toast on low in a frying pan 

2 ½  tsp. Vanilla

A Pinch of Salt

1/2 Cup Dark Chocolate Chips

½ tbsp. Virgin Coconut Oil

Method

Line a baking pan that will fit in your freezer with parchment paper.

Put the dates, coconut flakes, vanilla and salt in a food processor and chop well. If the mixture is too hard to chop you can add a little warm water to loosen it up.  I do about a tbsp.

Roll into balls about a teaspoon each and flatten with your hands.

Using a straw poke a hole in the middle of each cookie so it looks like a little donut.

Freeze for 45 minutes.

Add the chocolate chips and coconut oil to a bowl and microwave for about one minute until silky smooth. 

Dip the bottom of each cookie in the chocolate and put back on the parchment.

Then using a spoon drizzle a swirl of chocolate over each cookie.  Freeze for another 45 minutes and serve.

Store in an airtight container in the freezer.
