Roasted Potatoes and Mini Meatballs is a delicious and easy weeknight one pan meal.
For the meatballs I use just cheese and parsley sausage from Giuntas
It adds a great flavor to this dish. You can even use sweet sausage or hot sausage. Make the recipe your own and do what you like.
Roasted Potatoes and Mini Meatballs
(Serves 4)
1.5 lbs. Potatoes, peeled and cut into wedges
1 Small Onion, Sliced
2 Small Fennel Bulbs, cut into wedges
¼ Cup Olive Oil, plus extra to drizzle over the meatballs
½ tsp. Salt
¼ tsp. Pepper
2 Sprigs Fresh Rosemary
1.5 lbs Sausage, I use cheese and parsley sausage
Preheat 375 degrees. In a 9 x 13 baking pan add in the potatoes, onion and fennel.
Season with olive oil, salt and pepper and combine. Add in the sprigs of rosemary.
Remove the casing of the sausage and roll into small meatballs. Drizzle a little olive oil over the meatballs.
Cover with aluminum foil and bake for 35 minutes. Remove the foil and continue to bake for another 20 minutes until the vegetables and meatballs are cooked through.
I even like to turn on the broiler and make the meatballs more browned before serving.
