Potato Salad (With Mayo)

This POTATO SALAD screams summer to me.  I usually I like a mayoless potato salad, but this salad is the exception.  It is delicious, great for BBQ’s and super simple to make.


Potato Salad

(Serves 8-10)

Ingredients

3.5 lbs. Baby Potatoes

1 Cup Mayo

¼ Cup Buttermilk

2 ½ tbsp Dijon Mustard

1 tbsp. Grain Mustard

½ Cup Fresh Dill, Chopped

½ Cup Celery, Chopped

1 Small Red Onion, Chopped

1.5 tsp. Salt

1 tsp. Pepper

½ Cup Girkins, Drained and Chopped

6 Slices Bacon, Cooked (Make Sure It is Crispy) and Chopped

Method-

First, put the potatoes in a large pot and cover with water.  Add salt and bring to a boil, cooking for about 30 minutes or until a knife can easily be inserted into a potato. Drain and let cool completely.

Soak the red onion in a bowl with ice water.  This will take away some of the pungency and make it easier to digest. 

In the meantime, make the dressing.  In a large bowl combine the mayo, buttermilk, dijon, grain mustard, dill, salt and pepper.  Mix.  Add in the red onion, girkins and celery. Mix.

Slice the potatoes in half and add to the bowl with the dressing.   Toss gently. Finish by adding in the bacon. Toss again. Refrigerate for at least 4 hours and serve.
