For the dressing, good quality olive oil is so important. I used the olive oil from my home in Italy, now available on this website.
Ingredients
(Serves 4)
1 (4 oz) Pear, sliced paper thin
¼ Cup Olive Oil
2 tbsp. Balsamic
1 ¼ tsp. Dijon
1 tsp. Honey
¼ tsp. Salt
¼ tsp. Pepper
4 cups Arugula
⅓ Cup Crumbled Gorgonzola
3 tbsp. Dried Cranberries
3 tbsp. Chopped Walnuts
Method
Slice the pears paper thin. I use a mandolin for this but you can use a regular knife just make sure the pears are thin.
Arrange the pears in a circular pattern in a large platter in a single layer.
For the dressing combine olive oil, balsamic, dijon, honey, salt and pepper. Taste for any additional seasonings you need. Different honey and brands of dijon can taste differently. So adjust if needed.
In a small bowl mix some of the dressing with the arugula.
Place the arugula in the center of the pears.
Top with crumbled gorgonzola, dried cranberry and walnuts.
Drizzle on the rest of the dressing and serve immediately.
Note, you can make the dressing in advance.
