One Pan Chicken Dinner

Its that time of the year when we are all so busy we don’t have time to breathe. For me this will continue to Christmas.

So I look for meals that are delicious and simple to prepare.  This one pan meal is not only delicious but the prep couldn't be easier.

Serve it with some rice or even just a salad and trust me when I say your family will fall in LOVE!

One Pan Chicken Dinner

Ingredients

(Serves 4)

2.5 Chicken Breast (cut in half) & Drumsticks, use the parts you like. ****See recipe note for cooking time  

1 tsp. Salt 

½ tsp. Pepper

¼ Cup Olive oil 

2 Garlic Cloves, whole

⅛ Red Pepper Flakes 

1 Onion (6 oz.), sliced thinly

2 Red Peppers (about 1 lb.), seeded and sliced

½ tsp. Oregano 

3 Rosemary Sprigs, fresh 

½ Cup Peroni or Beer of Choice

½ Cup Low Sodium Chicken Broth 

Method

Season the chicken on both sides with ½ tsp. each of salt and pepper

In a frying pan, heat up olive oil and add the garlic and red pepper flakes.  Sautee for about 5 minutes on low.

Add in the onions and cook for about 4 to 5 minutes and add in the peppers and oregano. Sauté for about five minutes and remove them from the pan.

Add the chicken along with the rosemary sprigs. Cook the chicken on one side for about 5 minutes and then flip and cook on the other side for 5 more minutes.

Add in the beer, scraping the bottom of the bits off the bottom of the pan. Simmer for about four minutes and then cover and cook for 5 minutes.

Remove the cover and add in the peppers, chicken broth and the rest of the salt.

Cook uncovered for about another 10 minutes. The internal temp if the chicken should be 165 degrees. 

Serve

NOTE: I used breast and drumsticks for this  I cut the breasts into thirds and the drumsticks are not as big as legs. If you use different parts of chicken your cooking time will vary. For chicken legs for example they will take longer  I would add a little more beer and chicken broth so the chicken stays juicy while it cooks
