Mediterranean Tuna Salad in Radicchio Leave

My go to lunch……This low carb/high protein Mediterranean Tuna Salad is incredibly delicious and healthy. I serve it in radicchio leaves instead of bread to keep it low carb but you can make it into a sandwich if you desire.  

Be creative with this salad. You can mix up the ingredients. If you don't have any roasted peppers on hand, no problem, add in some chopped tomatoes. Make the recipe your own.

INGREDIENTS

(Serves 6)

8 (4 Ounce) Tuna Filets, (Use High Quality), Drain. 

3 Tablespoons Roasted Peppers, Chopped

2 Celery Stalks (2 Ounces), Chopped 

2 Tablespoons Red Onion (about ½ Ounce), Chopped 

10 Kalamata Olives, Cut in Quarters 

1 Can Cannellini Beans, Drained and rinsed

4 oz. Feta, Cubed

1 Small Baby Cucumber, Diced

½  Teaspoon Salt 

½ Teaspoon Black Pepper

1 Teaspoon Oregano 

3 Lemons, juiced (about ½ Cup)

¼ Cup Olive Oil 

Radicchio leaves to serve


METHOD

Put the tuna in a bowl and mash into tiny pieces with a fork. 


Next add the roasted peppers, celery, red onion, olives, cannellini beans, Feta and cucumber.. 


Season with salt and oregano. 


Add in lemon juice and olive oil and combine well. 


Chill and serve in the radicchio leaves.  


Store leftovers in an airtight container.
