This Healthy Bean Salad is great for meal prep and is super healthy.
For this recipe I use the chickpeas and cannellini beans from Jovial Foods. They are sold in glass jars which I love. They are from Italy and they are organic.
I also use my extra virgin olive oil from Tuscany. Good quality olive oil is essential in salads like this.

Ingredients
(Serves 6)
15 oz. Jar Chickpeas, rinsed and drained
15 oz. Jar Cannellini Beans, rinsed and drained
3 tbsp. Red Onion, chopped
1 cup Castelvetrano Olives, pitted and chopped
1 cup Marinated Artichoke Hearts, drained and quartered
5 oz. Feta, crumbled
1 tbsp. Fresh Mint, chopped
2 tbsp, Fresh Basil, chopped
1 Lemon, zested
2 Lemons, juiced
¾ cup, Olive Oil
⅛ tsp. Red Pepper Flakes
¾ tsp.Salt
Pepper
Method
In a large bowl combine the chickpeas, cannellini beans, red onion, olives, artichoke hearts, feta, mint, basil, lemon zest, lemon juice, olive oil and salt and pepper.
Mix and serve.
Store in an airtight container for up to 5 days.
