Friselle with a Bean Salad is a quick and easy lunch that you will love. Friselle is a traditional Italian bread that is double baked. So, you find that they come out of the package quite hard. The trick is to soften them by running them under water. Then you can use your imagination for toppings, just like you would a bruschetta.
Ingredients
(Serves 2)
4 Friselle, softened under water
3 tbsp. Red Wine Vinegar
½ cup Extra Virgin Olive Oil
1 cup Cannellini Beans, rinsed
1 Cucumber, diced into quarter moons
2 tbsp. Red Onion, chopped and then soaked in ice water. Then dry.
1 Small Tomatoes, chopped
Salt and Pepper to taste
5 Basil Leaves, chopped
Method
Run the friselle under cold water until they begin to soften. Drizzle red wine vinegar over each friselle as well as about 2 tbsp. olive oil.
In a small bowl, combine the beans with cucumber, red onions, tomatoes, basil and the remaining olive oil.
Season with salt and pepper to taste.
Top each friselle with the bean salad and serve.
