Broccoli Rabe, Sausage and Potato Sheet Pan Dinner

This Broccoli Rabe, Sausage and Potato Sheet Pan recipe is a go to easy dinner for me.

You have your protein, meat and carbs all on one sheet. Serve with a side salad and of course some crusty bread for a great meal!

In this dish the Italian Spice Blend I used is Teresa’s Tuscan Spice. It is available on my website as well.  If you don't want to purchase it, you can use a store bought Italian spice blend.

INGREDIENTS

(Serves 4)

1 Fennel Sausage Ring (1.5 lbs.)

1 Small Garlic Head, Sliced in half

1.8 lbs of Baby Potatoes, cut in quarters

2 tbsp. Cherry Peppers, chopped (OPTIONAL), I use @cento sliced cherry peppers

1 tsp. Italian Spice Blend, I use Teresa’s Tuscan Spice

2 tsp. Salt

¾ Cups Olive Oil, plus a little extra to drizzle on the garlic

¾  lb Broccoli Rabe, washed

2 tbsp. Cherry Peppers, chopped

METHOD

Preheat your oven to 400 degrees.


Line a large sheet pan with parchment paper. I use an 18 x 13 size pan. 


Place the potatoes and cherry peppers to one side of the sheet pan and drizzle with ½ cup olive oil, Italian spice and 1 tsp. salt.  Use your hand to combine all the ingredients.  Then place the garlic in the pan, drizzle with a little olive oil and turn so it is cut side down.


Place the sausage next to the potatoes and get in the oven.


Next cut about ¼ to ½ inch off the bottoms of the stalk of each piece of broccoli rabe.  I do this because these parts of the stems tend to be tough and too chewy to eat.


After about a half hour the potatoes should be almost cooked through and the sausage is getting browned. Take it out of the oven.  Remove the sausage from the pan and set aside.


Place the broccoli rabe next to the potatoes.  Take the garlic and remove the cloves onto a cutting board. Mash it.  Put it on the broccoli rabe. 


Drizzle ¼ of olive oil over the broccoli rabe and season with 1 tsp. Of salt.  Mix all the ingredients into the broccoli rabe using your hands. 


Place the sausage ring on top of the broccoli rabe. And get it back into the oven for about 15 to 20 minutes until the broccoli rabe is cooked through. Serve.
