Air Fryer Lemon Chicken

Air Fryer Lemon Chicken is an incredibly easy and healthy meal, plus it is fabulous leftovers.  If you have never air fried your chicken it is time to start.  It is delicious.

For the marinade I use Teresa’s Tuscan Spice.  It is an amazing blend of Mediterranean spices. It is so versatile you can use it on so many things like roasted vegetables, salads, fish and meat. It is available on my website. If you dont want to purchase the spice you can use a regular Italian spice blend.  But I highly recommend Teresa’s Spice.  It is the only spice blend I use in my kitchen! 

Air Fryer Lemon Chicken

(Serves 4)

The Marinade

3.5 lbs. Chicken, I used a combo of 10 Chicken Drumsticks or Legs and 2 Breasts (Skin on)

3 tbsp. Extra Virgin Olive Oil

2 tsp. Lemon Juice

3 tsp. Italian Spice Blend, I use Teresa’s Tuscan Spice

The Sauce

½ Cup Extra Virgin Olive Oil

6 Garlic Cloves

½ Cup Lemon Juice

½ tsp. Paprika

3/4 tsp. Salt

2 tbsp. Fresh Parsley, chopped  

½ tsp. Italian Spice Blend, I use Teresa’s Tuscan Spice

Method

In a bowl combine the lemon juice and Italian seasoning.  Add in the chicken, coat well with the mixture and marinate for a half hour.

While marinating, make the sauce. In a small pan heat the olive oil and garlic. Cook the garlic until fork tender. Mash the garlic into the olive oil using a fork. Sautee for a minute then add the lemon juice, paprika, salt, fresh parsley and Italian spice.  

Take off the heat and set aside.

Preheat your airfryer to 400 degrees.  Add in the chicken legs and cook for about 20 minutes. Be sure to flip half way through. The internal temp of the chicken when cooked should be 165 degrees. 

Once the chicken is cooked pour the sauce over it and coat well. Serve
