Tuscan Sausage and Bean

One of my favorite things about coming to Italy is discovering authentic Italian dishes.  Since we bought our home 4 years ago, I have learned so many and this is one of my favorites… Tuscan Sausage and Beans.  It is called Fagioli all’uccelletto and it couldn't be easier to prepare.  It is comfort food at its best.  

 

Tuscan Sausage & Beans

(Serves 3)

Ingredients

¼ Cup Olive Oil, plus more for serving 

6 Sausage, Poke Holes

6 Garlic Cloves

2 ½ Cups Cannellini Beans, rinsed and drained

3 Sprigs Rosemary, leave 2 whole and chop one

1 ½ tsp Salt

¼ tsp Pepper

1 Cup Crushed, use whole tomatoes and crush by hand

½ Cup Passata


Method

Sautee the garlic in the olive oil until fork tender.  

Add in the sausage and the rosemary (2 Sprigs). Saute the sausage on all sides for about 10 minutes until golden brown.

Add in the beans and season with salt and pepper.

Next, get in the passata and crushed tomatoes.

Season with the chopped rosemary and simmer on low for about 20 minutes.

Serve with crusty, toasted bread and a drizzle of olive oil.


Add them to a pot with sauteed garlic and brown on all sides, getting in some fresh basil

Add in the beans and season with salt and pepper.

Next, get in the passata and crushed tomatoes.

Season with the chopped rosemary and simmer on low for about 20 minutes.

Serve with crusty, toasted bread and a drizzle of olive oil.
