Sausage & Peppers

 

This is the easiest, no fuss sausage & peppers recipe that you will find. It is so simple you are going to want to put this recipe on repeat for BBQ Season.  This whole recipe is mess free (have to love that) and made completely on the grill.  

For this recipe, I use the ring sausage from Giuntas Meat Farms,  but you can use the regular sausage if you would like.  I used a combo of chicken sausage and cheese and parsley.  


Ingredients

6 Peppers (about 3 lbs.), Sliced thinly- I use 3 red peppers, 2 green and 1 yellow

1 Large Onion (about 1 lb.), Sliced thinly

½ Cup Olive oil 

1 tsp. Salt 

½ tsp. Black Pepper

1 14.5 oz jar Pepperoncini(optional), drained, seeded and slicesd

8 sausage links or 2 ring sausages


Method

Turn the BBQ on medium heat about 375 degrees.

In a disposable aluminum pan or glass pyrex combine the peppers, onions, olive oil, salt, pepper and pepperoncini. 

Cover with aluminum foil and put the pan on the grill for about 30 minutes. 

Remove the aluminum and continue to cook for 10 more minutes. Be sure to turn the this mixture at least once to avoid burning. 

Next, grill the sausage. 

When they are cooked, remove from the grill and let rest for about 10 minutes and then slice up.

Combine the sausage with pepper and onions and serve. 


Recipe Note: You can make this a day in advance and reheat before serving.
