Roasted Sausage, Potatoes and Onions

Roasted Sausage, Potatoes and Onions is a meal that reminds me of my childhood.  My grandpa would make this and I can remember the amazing smell of it when I walked into his kitchen.  On a recent trip to Italy I went to a restaurant and had this dish. The smell brought me right back to my childhood.  I knew I had to come home and make this amazingly simple rustic dish for my family. 

As always, quality is important.  So don’t use a store bought brand of sausage.  Go to your local Italian food specialty store and pick up the good stuff.  Trust me it is worth it.  You can also change up the sausage a bit.  Sometimes I substitute cheese and parsley sausage for the sweet.  Up to you, make this recipe your own!

I serve this dish with a nice salad and my family loves it!!

Sausage, Potatoes and Onions (serves 6)

Ingredients

1.5 lbs. Sweet Italian Sausage

1 lb. Hot Sausage

4lbs. Potatoes- Peeled and cut into wedges

1 lb. (2 Medium) Onions - Sliced Thinly

½ Cup of Extra Virgin Olive Oil- Plus more for greasing pan and drizzling

1 ½ tsp. Salt

1 tsp. Pepper

1 tbsp. Chopped Fresh Rosemary

Method

Preheat the oven to 450 degrees.  

 

Put an oven safe rack on top of a baking sheet (or line a baking sheet with parchment) and place the sausage on it.  Put it in the oven to brown for about 20 minutes.

 

In the meantime, to a bowl combine the potatoes, onions, olive oil, salt, pepper and rosemary. Then put in a large oven safe pan in a single layer. 

 

Take the sausage out of the oven and decrease the temperature to 425 degrees. 

 

Put the sausages (and the juices in the pan) in the bowl, coating them with the remnants of the seasonings.  


Place the sausages on top of the potatoes and onions. Don't forget to pour the extra remaining juices from the bowl over the pan.  Cover with aluminum foil.   Get in the oven for 30 minutes then remove the foil and cook for another 15 to 20 minutes and serve.
