Mini Meatloaves

Welcome to Episode 6 of meals that I prep for my kids….These are my mini meat loaves stuffed with mozzarella. I make the meatloaf mixture freeze in cubes. I use the souper cubes that I get on Amazon. 

Then whenever we want to make a loaf, we defrost and then we proceed with the recipe…making things so much easier.

Mini Meatloaf

INGREDIENTS

(Makes 8)

2 Pounds Ground Pork

⅔ Pound Ground Beef

1¼ Cups Breadcrumbs

1 ¾ Cups Tomato Sauce or Passata 

1¼ Cups Grated Pecorino Romano Cheese

3 Teaspoons Salt

1 ½ tsp. Pepper

1 Teaspoon Garlic Powder

2 Tablespoons Parsley, Chopped

3 Eggs, Beaten

½ Pound Low-Moisture Mozzarella, Cut into ½ inch logs 


To make one serving of the meatloaf 

2 oz. Onion, sliced thinly

2 Large Potatoes (about 1 ¼ lbs.) peeled and cubed

4 tablespoons Olive Oil, plus more to coat the pan 

1 cup Passata

½ tsp. Salt

¼ tsp. Pepper 

1  tbsp. Fresh Parsley, chopped 



Method

In a bowl combine pork, beef, eggs, Pecorino, 1 tsp. salt, 1 tsp. pepper, 3 tbsp. parsley, and garlic pepper. 


In a small bowl, put the bread crumbs and add 1 ¾ cups of tomato sauce or passata. Mix well. Add it to the meat mixture. Use your hands to combine the meat well.

Then take your Souper Cubes. 

Put about a ½ cup in the bottom of each mold. Press down into the mold. 

Place mozzarella in the middle of each cube. Then put about a ½ cup more of the meat mix on top of each. Press the mixture into each mold too. Be sure to cover the mozzarella. 

Cover and freeze. 

When ready to use a serving, defrost it. 

Preheat the oven to 375°.

Coat the bottom the small oven safe pan with a little bit of olive oil oil, and place the meatloaf in the middle  

In a bowl put the potatoes, onions, olive oil, passata, parsley, salt, pepper, and parsley. 


Put the potato mixture around the perimeter of the meatloaf. 


Cover with aluminum foil and bake for about 45 minutes. Remove the aluminum foil and continue to bake for about another 15 minutes until the meat is cooked thru (160 degrees) and the meatloaf is golden brown. Serve.
