This simple apple cake comes together in about 5 minutes, even the most novice of bakers can make this cake. It is so incredibly light and delicious. It is great for breakfast or brunch but even works great for dessert. Maybe even warm it up and top with vanilla ice
You can also get creative with the type of fruit and jam. Use a combination that you like.
Ingredients
(Serves 8)
¾ cups Flour
1 tsp. Baking Powder
1 pinch Salt
2 Eggs
½ cup Sugar
8 tbsp. Butter, Melted—plus extra to grease the pan
¼ tsp. Cinnamon
½ tsp. Vanilla
⅓ cup Heavy Cream
1 Apple, very finely diced
½ cup Apricot Jam
Powdered Sugar to dust the cake
Method
Preheat your oven to 350 degrees.
Line a 9 inch tart pan with a removable bottom with parchment and grease all sides with butter.
Sift the flour, baking powder and salt in a small bowl.
In a medium size bowl combine the eggs and sugar well.
Then add in the butter, cinnamon, vanilla and heavy cream.
Combine and add in the sifted flour and baking powder.
Mix in the apples.
Pour the batter in the tarte pan.
Top with dollops of the apricot jam all over the top of the cake. If the jam is too thick, either heat in a pan in a pan on the stove or put it in the microwave briefly to loosen.
Bake for 30 minutes. Cool and top with a dusting of powdered sugar. Serve
