Growing up my grandma always had something sweet for breakfast with her coffee. From a very early age these simple “S” cookies were a staple in our family. She would make them often and always have them in her cookie jar.
Grandma’s “S” Cookies
Ingredients
(Makes about 64 cookies)

2 ½ Cups Flour
1 Stick Butter, cut into tiny cubes
4 Eggs
1 Cup Sugar- Maybe more
2 tsp Baking Powder
¼ tsp. Salt
1 ½ tbsp. Vanilla
Method
Preheat the oven to 350 degrees. Three large cookie sheets lined with parchment.
In a bowl add in the flour. Add in the butter. Use your fingers to mix the flour and butter. Rubbing it between your fingers and making it almost like a bread crumb texture.
Make a well in the middle of the mixture and add in the eggs, sugar, baking powder, vanilla and salt.
Use a fork to combine until a dough begins to form and then use your hands to mix.
Place the dough on the counter and knead for about 2 minutes.
Cut the dough into quarters, then each quarter in half.
Take a piece of the dough and roll it out into a tube (log) shape about 22 inches long.
Then cut the log into 2 ½ pieces. Roll the 2 ½ inch piece out a little more until it is about 4 inches in length and form into the letter “S.”
Do this with the rest of the dough.
Place on parchment and bake for about 15 minutes until the cookie become a light golden brown.
