Peach Tarte with an Amaretti Cookie Crumble

You have to make this 🍑 Peach 🍑Tarte with an Amaretti Cookie Crumble. It is so easy and it comes together in minutes. I use a store-bought puff pastry for this and it works great. You can top it with vanilla ice cream or even some whip cream. Either way it’s delicious, easy not to mention that your family will love it. 

Peach Tarte with an Amaretti Cookie Crumble

2 Peaches- Sliced

¼ Cup, plus 1 Tsp. Brown Sugar

1 Tbsp. Corn Starch

1 Tsp. Cinnamon

1 Tsp. Vanilla Extract

¼ Tsp. Almond Extract

2 Tbsp. Fresh Lemon Juice

1 Puff Pastry Sheet- Store Bought and Thawed

10 Amaretti Cookies- Made into Crumbs

3 Tbsp. Butter

1 Egg – Beaten 

Vanilla Ice Cream and Powdered Sugar to Garnish (Optional)

Preheat your oven to 400°. Line a baking sheet with parchment paper and lay the puff pastry on top of it. Using a knife, score a 1 inch perimeter around the border of the puff pastry. Be sure not to pierce through the pastry. Then take a fork and gently poke holes all around the middle of the pastry (don’t fork the border). 

Remove the stone from each peach, slice thinly and get them into a bowl. Add in a ¼ cup of brown sugar, corn starch, cinnamon, vanilla extract, almond extract and lemon juice. Mix it well.

Add the peaches to the middle of the pastry in a single layer in rows. I like to put them in different directions to make it look pretty. Brush the top of the peaches with some of the juice remaining in the bowl. Get it in the oven for about 15 minutes. 

In the meantime, put your amaretti cookies in a Ziploc bag and pound them into crumbs. You could also do this in a food processor. Put the crumbs in a small bowl and add the butter and the 1 tsp. brown sugar. Combine well.

Once the dough starts to brown a little bit in the oven (about 15 minutes), take the tarte out of the oven and sprinkle the amaretti cookies over the top of the peaches. Get it back into the oven for about 10 minutes until the crumbs start to get nice and toasty. Remove it from the oven. I like to serve it warm with vanilla ice cream and sprinkled with powdered sugar on top.
