Key Lime Pie

Key Lime Pie    


Crust-12 graham crackers

2 Tbsps sugar

1 stick of salted butter-melted

Pie Filling:

2 large egg yolks

14 oz can of sweetened condensed milk

½ cup key lime juice

1 Tbsp grated lime zest

For Crust:

Combine graham crackers and sugar in a food processor and pulse until fine crumbs form. Pour in the melted butter and pulse until fine crumbs form. Press mixture into the bottom of a 9 inch pie plate. Bake until just set, about 10 min. Set aside 10 min to cool.   


Whisk the egg yolks, condensed milk, lime juice and zest in a medium bowl until well combined.  Pour into the pie crust and bake at 350 degrees until the center is slightly jiggly about 15 min.  Let cool for 30 minutes and then refrigerate for at least an hour. 

Whipped Cream:

1 cup of heavy cream

4 Tbsps powdered sugar 

Beat heavy cream and powdered sugar on medium until stiff peaks form.  Garnish pie with crushed graham crackers, lime slices and serve with a dollop of the whipped cream.
