Homemade Granola

Granola Make 14 Cups 

Homemade Granola is so easy to make on your own and so much healthier than store bought. I make it and I store an airtight container and it will last for months. 

I put dried fruit and chocolate chips in mine. But you can be creative and put in what you’d like. I love it in the morning with some plain yogurt and fresh fruit!! 

Ingredients

4 Cups Old Fashioned Rolled Oats

2 Cups Unsweetened, Shredded Coconut

¾ Cups Coconut Oil, Melted for about 1 minute in the microwave to liquify

¾ Cups Honey

¾ Cups Coconut Sugar

6 Tablespoons Vanilla Extract

1 tsp. Cinnamon

1 Cup Dried Apricots, Diced

1 Cup Dried Pitted Figs, Diced

¾ Cup Dried Cherries

¾ Cup Golden Raisins

1 Cup Pitted Dates, Chopped

1 Cup of Semi-Sweet Chocolate Chips

Method

Pre-heat the oven to 350 degrees. Put the oats and shredded coconut in a bowl and using a spatula combine the ingredients. 

In a separate bowl, whisk together coconut oil, honey, vanilla extract, coconut sugar, and cinnamon.

Pour the mixture over the oats. Combine well until the oats and coconut are

coated in the oil mixture. Put on a parchment lined baking sheet and get it in the oven, stirring every 10 minutes to make sure it cooks evenly. Bake for about 35 minutes or until

golden brown. 

Meanwhile, in a bowl mix apricots, figs, cherries, raisins, dates and chocolate chips. 

Remove the granola from the oven and let it cool completely. Combine the dried fruit and the cooled.  Store in an airtight container.
