Gluten Free Banana Chocolate Chip Bread is a healthy dessert, breakfast or snack that you don’t have to feel guilty about eating. It is also very low in sugar. I use unsweetened apple sauce and along with the Enjoy Lofe chocolate chips to give it just the right amount of sweetness. This loaf even freezes well. I slice small pieces and ferrets. So, when I have a sweet craving in the afternoon, I just whip out a slice.
Gluten and Sugar Free Chocolate Chip Banana Bread
3 Bananas (must be ripe), mashed
1 cup Gluten Free Flour (I use Cup for Cup brand)
¼ tsp. Salt
¾ tsp. Baking Soda
2 tbsp. Butter (make sure it is soft)
½ Cup Brown Sugar
2 tbsp. Unsweetened Apple Sauce
2 Egg Whites
1 ½ tsp. Vanilla Extract
1 cup Dark Chocolate Chips, plus 3 tbsp to top the loaf
Method
Preheat the oven to 350°. Grease a loaf pan very well with butter.
In a bowl combine the flour, salt and baking soda and set aside.
Whisk (or use a mixer) combine the butter and sugar. Add the apple sauce, eggs, vanilla, and banana,
Gradually add the flour to the egg mixture. Then add the chips.
Pour the mixture into the pan. Top with the remains 3 tbsp. of chips.
Bake at 350° for about 35 minutes or until a knife inserted down the middle of the loaf comes out clean.
