Gluten Free Banana Chocolate Chip Bread is a healthy dessert, breakfast or snack that you don’t have to feel guilty about eating. It is also very low in sugar. I use unsweetened apple sauce and sugar substitute along with Lilly Brand chocolate chips to give it just the right amount of sweetness. This loaf even freezes well. I slice small pieces and put them in Ziploc bags so when I have a sweet craving in the afternoon I just whip out a slice.
Gluten Free Chocolate Chip Banana Bread
3 bananas (must be ripe)
1 cup of gluten free flour (I use Cup for Cup brand)
¼ tsp. Salt
¾ tsp. Baking Soda
2 tbsp. Butter (make sure it is soft)
½ cup Swerve (sugar free) brown sugar
2 tbsp. Unsweetened Apple Sauce
2 egg whites
1 ½ tsp. Vanilla Extract
1 cup sugar free chocolate chips (I use Lilly’s brand)
Preheat the oven to 350°. Spray a loaf pan with baking spray.
In a bowl combine the flour, salt and baking soda and set aside.
In a mixer, combine the butter and sugar. Add the apple sauce, eggs, vanilla, and banana.
Gradually add the flour to the egg mixture.
Bake at 350° for about 35 minutes or until a knife inserted down the middle of the loaf comes out clean.
