Baked Peaches
Baked Peaches stuffed with amaretti cookie crumbs and topped with a mascarpone cream are a delicious recipe that is so easy to do and it sure to impress.
The flavors here are just incredible, especially during peach season. I hope you will try it. I got these delicious and juicy peaches at my favorite local supermarket GIUNTAS MEATS FARMS
Ingredients (Serves 4)
4 Peaches, Halved with Stone Removed
10 Tsp. Amaretti Cookie Crumbs, Crush the amaretti cookies into crumbs in a ziplock bags
2 Tbsp. Butter, Cut into 8 slices
4 Tsp. Brown Sugar
For the Cream Topping
½ Cup Heavy Cream
1 Tsp. Vanilla Extract
3 Tbsp. Powdered Sugar
1/4 Cup Mascarpone
Sprigs of Mint and Extra Confectioners sugar for garnish
Preheat the oven to 375 Degrees. Place the peaches core side up on a baking sheet. Sprinkle 1 ¼ tsp of amaretti cookies crumbs on each peach followed by ½ tsp. of brown sugar, and a pat of butter. Place in the oven.
In the meantime, in a mixer whip the heavy cream, vanilla and powdered sugar until a whipped cream is formed. Then add the mascarpone and whip for about 30 seconds, until all the ingredients are combined.
Bake the peaches for about 20 minutes or until each peach is cooked through. You will know the peach is cooked when you can insert a knife easily.
Remove from the oven and place a large dollop of the mascarpone cream on top of the each peach Garnish with fresh mint and a dusting of more powdered sugar. Serve.
