A few weeks ago, I was going through my recipes and came across one written in my grandmother’s handwriting. All it said was “Aunt Francie’s Cake” and it listed just the ingredients. In typical fashion there were no instructions. My family often did this years ago. They half wrote down recipes, if anything at all.
That’s why I get so excited to re-create these recipes and write everything down for future generations in our family. Today, I’m so excited to share this recipe with you. It’s so delicious. I know you will love it. It is a cake that is perfect for breakfast or even a dessert!
Aunt Francie’s Bundt Cake
Ingredients
(Serves 8)
1 cup Walnuts, finely chopped
2 tsp. Cinnamon
½ cup Brown Sugar
4 Cups Flour
2 tsp. Baking Powder
2 tsp. Baking Soda
2 Sticks Butter, softened
2 Cups Sugar
4 Eggs, beaten
2 tsp. Vanilla
1 Pint Sour Cream
Powdered Sugar
Method
Grease a bundt pan very well and preheat the oven to 325 degrees.
In a small bowl, combine the walnuts, cinnamon and brown sugar. Set aside.
In a separate small bowl, combine the flour, baking soda and baking powder.
In a stand mixer fitted with the whisk attachment, add in the butter and sugar and blend very well until smooth. Add in the eggs and blend.
Next get in the vanilla and the sour cream. Combine.
Gradually add in the flour mixture to form your batter.
Pour half the batter on the bottom of the Bundt pan.
Sprinkle the walnut mixture evenly over the entire top of the first layer.
Then put the rest of the batter on top of the layer of walnuts. Spread out evenly.
Bake in the middle rack of your oven. BAke for 50 minutes to 1 hour.
Baking times may vary. My oven took about one hour. You will know when the cake is done when a knife inserted in the middle comes out clean.
Take the cake out of the oven. Cool. And then sprinkle on powdered sugar.
Serve.
