I was craving an affogato and I couldn’t resist putting these bars in it and making it into a sundae. Well, let me tell you it was a match made in heaven. I put a bar in a mug, topped it with gelato and then poured the espresso right over it. Some whipped cream and chocolate syrup to finish. Oh I can’t forget the extra crumbs that I topped it with!!! So so good!!! Recipe below.
Oatmeal Fudge Bars
The Dough
1 cup Salted Butter- Softened
2 Cups of Brown Sugar
2 Whole Eggs- Beaten
3 Cups Old Fashioned Oats
2 ½ Cups All Purpose Flour
3 Tsp. Vanilla Extract
½ Tsp. Salt
1 Tsp. Baking Soda
For the Fudge Middle
2 Cups of Dark Chocolate Chips
14 oz. Can Sweetened Condensed Meal
2 Tbsp. Butter
2 Tsp. Vanilla
Preheat the oven to 350 degrees. Line a 13 x 9 pan with parchment and spray well with non stick spray. In a mixer fitted with a paddle attachment cream the butter and brown sugar. Add in the eggs, the oats, the flour, vanilla, salt and baking soda and combine until well mixed.
In a glass bowl put the chocolate chips, sweetened condensed milk and butter. Put the bowl in the microwave and heat for 1 minute. Remove and stir, return to the microwave and heat for another 45 seconds. Make sure the butter is melted and add in the vanilla and mix. Pour this over the top of the first layer. Make sure it is evenly spread over the top of the layer. Then using your fingers crumble the remaining dough on top of the fudge. Spread it out evenly. Bake for about 30 minutes. The top should be golden brown. Cut into squares and serve
For the Sundae take one bar, put it in a mug, top with a scoop or two of gelato, a shot of espresso, whipped cream and chocolate syrup!!
