I love fresh figs. They are one of my favorites. But one thing that is often overlooked are the leaves on the fig tree. The leaves actually pack a lot of flavor and are so good when used in this recipe.
You won’t believe that when you make this syrup, you’ll taste hints of coconut, vanilla and even almond.
I use this syrup to sweeten my coffee. You can use it in cocktails, baking and even drizzled over ice cream.
Ingredients
(Makes about 8 oz. Syrup)
6 to 7 Fig Leaves, washes well and dried
1 cup Water
1 cup Sugar
Method
Preheat your oven to 350 degrees.
Place the washed fig leaves on a baking sheet in a single layer and toast for 6 to 7 minutes in the oven. You will see the leaves become very dry and shriveled. Remove from the oven.
On your stove top, combine water and the sugar in a small sauce pan. Begin to simmer on a very low flame until the sugar dissolves. Crumble the fig leaves into the pot and simmer for five minutes.
Remove from the stove, and set aside for at least an hour.
Strain the syrup and put it into a container. Store in the refrigerator for up to a month.
