Uncle Vinny’s chicken is a dish that I can remember very vividly as a kid. Every summer my uncle made this and it was one of our favorites. I can vividly remember him at the grill. He was so proud of his chicken, as he should be. It’s so incredibly easy and I hope you will try it. Full recipe below.
Ingredients
(Serves 6)
4 lbs. Chicken, I used a combo of drumsticks and breasts
1 Cup Olive Oil
16 Garlic Cloves
1 ½ tsp. Salt
½ tsp. Pepper
2 tbsp. Dijon Mustard
1 ¼ cups Fresh Lemon Juice
½ Cup Fresh Chopped Parsley
1 cup Low Sodium Chicken Broth
Method
In a small frying pan cook the garlic on a low flame until fork tender in olive oil. Mashed the garlic right into the oil and cool.
In a bowl combine the garlic oil, salt, pepper, mustard, lemon juice and parsley. Mix well.
Put the cleaned chicken in a ziplock. Pour the marinade over the chicken and marinate for at least an hour (even overnight).
Preheat the grill to 375 degrees.
Pour the contents of the ziplock into aluminum pans (I use two half trays), cover with aluminum foil and get on the grill. I like to add chicken broth to the pan halfway through cooking.
Cook for about 1 hour, periodically giving the chicken a turn. Uncover and bake for about 20 more minutes. Baste the chicken with the juices. Cook until the internal temperature is 165 degrees and serve.
