Sweet & Sour Chicken

Sweet & Sour Chicken is a meal that your family will love and it comes together so quickly.  Honestly, you could even make this for a dinner party or holiday because it tastes so delicious even the next day.

Sweet & Sour Chicken

Ingredients

(Serves 5)

⅓ Cup  Olive Oil

10 Chicken Cutlets (1.5 lbs)

½ Cup Flour

1 ½ tsp Salt

1/2 tsp. Pepper

4 Garlic Cloves, thinly sliced 

⅛ tsp. Red Pepper Flakes

1 ½ lbs. Peppers, I use a combo of red, yellow and orange peppers sliced thinly 

⅔ Cup Pitted Kalamata Olives, halved

2 tbsp. Non Pariel Capers, drained

½ Cup Pureed Tomatoes

3 tbsp. Red Wine Vinegar

1 tbsp.  + 1 tsp. Sugar

½ Cup Water

2 tbsp, Chopped Fresh Parsley


Method

In a bowl, season the flour with ½ tsp salt and ¼ tsp pepper.

Put 6 tbsp. of olive oil in a large frying pan. Dip each piece of chicken in the flour on both sides.

Place the chicken in the pan and saute for about 3 minutes on each side.  

Remove the chicken from the pan.  Remove any excess brown bits.

Add the rest of the oil to the pan.  Get in the garlic and red pepper flakes and sauteed on a low flame.

Add in the peppers and saute for about 8 to 10 minutes until the peppers begin to soften and season with 1 tsp. of salt and ¼ tsp. pepper.

Then add in the tomatoes and bring to a light simmer.

Add in the olives and capers and combine. 

Get in the red wine vinegar and the sugar and turn.

Next , add in the water and mix well allowing all the flavors to come together.

Sprinkle in the fresh parsley.

Add the chicken back in and cover in the pepper sauce.

Serve.
