Peach and Tomato Brushetta Chicken

This BRUSHETTA Chicken with creamy burrata will be your go to chicken dish all summer long. It's light and delicious and sooooo easy to do. 

For this recipe, as in any recipe that I show you quality ingredients are so important.  I use my extra virgin olive oil made in Tuscany and Teresa’s Tuscan Spice.

Peach and Tomato Bruschetta Chicken 

Ingredients 

(Serves 4)

2.5 lbs of Chicken Cutlets

1 cup Olive Oil

4 tbsp. Balsamic Vinegar

1 ¼  tsp. Salt

2 tsp. Italian Spice, I use Teresa’s Tuscan Spice

Bruschetta Topping

2 Tomatoes, Chopped 

2 Peaches, Chopped

2 tbsp. Red Onions

3 tbsp. Chopped Fresh Basil 

3 tbsp. Good Quality Balsamic

¼ Cup Extra Virgin Olive Oil

Salt and Pepper to Taste

4 Burrata Balls


Method

Put the chicken cutlets in a large bowl. 

In a measuring cup mix olive oil, balsamic, salt and Italian Spice.  Add about ¾ of the mixture to the chicken and combine.  

Let it marinate for about 20 minutes.

Heat your grill. Cook the chicken on both sides until cooked through, brushing the chicken with the remaining marinade. 

In a separate bowl combine the tomatoes, peaches, red onion, and basil.  Drizzle in the olive oil and balsamic and season with salt and pepper to taste.  Mix.

Put the cooked chicken in a platter. Break open each burrata ball and spread evenly over the top of each piece of chicken. 

Top with the tomato salad. 

Serve.
