One Pan Stove Top Mediterranean Chicken
Ingredients
(Serves 4)
2 ½ lbs. Chicken Breasts, cut into cubes
¼ cup Flour
1 ¼ tsp (in flour)Salt
3/4 tsp (In flour) Pepper
½ Cup Olive Oil
1 (4 oz.) Small Onion, sliced thinly
⅛ Red Pepper Flakes
¾ Cups White Wine
8 oz. Cherry Tomates, cut in half
½ Cup Artichokes, oil drain and cut in 4ths
2 tbsp. Non Pareil Capers
½ Cup Pitted Olives
¾ Cups Water or Chicken Broth

Method
In a small bowl season the flour with ¼ tsp of salt and ⅛ tsp. of pepper. Place the cubed chicken in the flour and coat on all sides.
In a large frying pan, heat up the olive oil. Add in the chicken (shake off any excess flour)and cook on all sides until slightly browned. The chicken should almost be cooked through.
Add in the onions and red pepper flakes.
Deglaze with white wine, using a spatula to scrap off any bits off the bottom of the pan.
Season with 1 tsp. salt and ½ tsp. pepper.
Add in the tomatoes and saute until they begin to soften.
Get in the artichokes, capers and olives. Saute on low for 5 minutes and add in the water or chicken broth.
Simmer (you will see the sauce begin to thicken). Cook for about 10 minutes on low and serve.
