One Pan Mediterranean Chicken

This One Pan Mediterranean Chicken dinner comes together in minutes and is one of the easiest weeknight meals you can make.  It is not only delicious and it is healthy, I hope you will try it.


For this recipe I use Teresa’s Tuscan Spice.  It is an incredible Italian spice blend that I use on so many things….from fish to chicken to potatoes, even salads.


I sell this spice right here on my website and I can’t praise it enough. It is an essential in my kitchen.

Ingredients

(Serves 4)

3 lbs. Chicken, I used a combo of drumsticks and breasts (cut in half)

1 ¾ lbs Potatoes, peeled and cubed

1 Pint Cherry Tomatoes, halved

1 Cup Pitted Kalamata Olives

3 tbsp. Fresh Rosemary, Chopped

2 Bay Leaves

2 Sprigs of Thyme

⅔ Cup Olive Oil

⅓ Cup White Wine

1 ½ tsp. Salt

½ tsp. Pepper

½ Tsp. Tuscan Spice


Method

Preheat the oven to 400 degrees.

In a 15 x 10 Baking pan, add in all the chicken, potatoes, cherry tomatoes, olives, rosemary, bay leaves, thyme, olive oil, white wine, salt, pepper and Tuscan Spice. 

Combine and cover.  Bake in the oven for 30 minutes, remove the foil and cook for another 30 minutes or until the internal temp of the chicken is 165 degrees and the veggies are cooked thru.
